Travellin’ Tuesdays : TFL Are Not My Friends

Today is the first time in 4 days that I have been able to look forward to a simple journey to work. For the entirety of this bank holiday weekend, during which I have worked 3 days out of 4, TFL (Transport for London) have royally fucked up my day.
Every weekend there are tube closures, it is the bane of every Londoner’s journey. However this weekend, the powers that be truly outdid themselves, closing, delaying or someway altering 4 out of the 5 routes by which I can get to work. I was prepared for the tubes, I was prepared to allow extra time to bus, train and then tube my way through central London on one of the busiest weekends of the year. What I wasn’t prepared for the closure of said bus and train services, meaning that I had to use such a massive roundabout route that it probably would’ve been quicker to invent a jet pack.
So thank you TFL, for closing my nearest tube lines, delaying my nearest train service, and shutting off the traffic lights on an extremely busy intersection next to my house, meaning that every bus had to miss out my neighbourhood. Thank you so very bloody much.

Rant over.

But still, REALLY TFL?!

Sunday Cook Off : Oreos

In my current job I have taken to baking something for my colleagues every week, I get to try out new recipes and they get to stuff their faces with sugary goodness. I’ve done this at pretty much every job I’ve ever had, and needless to say it’s always gone down pretty well.

This week I went back to an old favourite, Oreos. The genius behind My Kitchen Addiction has perfected the filling so that it has just the right consistency that reminds you of the real thing.

I would recommend UK guys buy some cup measurements, as a committed internet baker I’ve found them incredibly useful! Still have no idea about ‘sticks’ of butter though.

(Makes approximately 3 dozen)

For the cookies:

  • 230g unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all purpose flour
  • 3/4 cup dutch process cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt

For the filling:

  • 120g unsalted butter, softened
  • 2 tablespoons double cream
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 3 – 3 1/2 cups powdered sugar, whisked to remove any lumps

Combine the butter and sugar in a large mixing bowl, and beat on medium speed until light and fluffy. Add the egg and vanilla, and beat until well incorporated.

Whisk together the flour, cocoa, baking powder, and salt. Gradually add the dry mixture to the creamed mixture, beating on the lowest speed. Continue to mix on the lowest setting until the dry ingredients are just incorporated.

Divide the dough in half, and shape into two discs. Wrap in plastic wrap and refrigerate for 1 hour.

When the dough is chilled, preheat the oven to 180°F. Line a baking sheet with parchment paper or a baking mat. Set aside.

Taking only one portion of dough out of the refrigerator at a time, turn the dough out onto a lightly floured surface. Roll the dough to 1/8 – 1/4-inch thickness. Use a cookie cutter (approximately 2 inches in diameter) to cut out cookies and transfer them to the prepared baking sheet.

Bake the cookies for 10-12 minutes, then transfer to a wire rack to cool completely. I baked mine for about 8 minutes but my oven is mental, and it depends on whether you prefer your cookies soft or crunchy.

Once the cookies are cooled, prepare the filling. Combine the softened butter, double cream, vanilla, and salt and beat until combined. The mixture may be a bit lumpy, but will come together. Add the powdered sugar gradually, approximately 1/2 cup at a time, until the filling comes together. It will be slightly stiffer than a cupcake frosting.

Transfer the filling to a piping bag fitted with a large round tip. Pipe the filling onto half of the cookies, and top with the remaining cookies to form cookie sandwiches.

Saturday Pot Luck: SNAIL

Apparently there’s a clubby type tune called ‘Sail’ by a group called AWOLNATION floating around, the people at The PetCollective were singing it in their office and some bright spark replaced the titular word with that of a small shell-dwelling creature. Hilarity ensues.

I watched the original, and it just didn’t seem as good without the snail.

Thursday Me Time : It’s All About Eldad

Today is not about me, it’s about Eldad Hagar. I don’t know much about him, other than he is some sort of magical dog whisperer who saves the lives of stray dogs around LA.

One of his many videos popped up in my ‘Recommended’ column on YouTube, and three hours later I was still on his channel. The format for every video is as follows:
He has been told about a stray dog somewhere in LA
He goes to said location armed with cheeseburgers and his magic flowery lead
He finds the dog, who generally looks at Eldad like he’s some sort of snack
Five minutes later, Eldad is cuddling and playing with his new best friend

I don’t get it, but I can’t stop watching it.

There have been times when the dog has been less aggressive and more terrified when Eldad turns up, and those are the times when you realise quite how amazing this man is. He doesn’t like to use force, he simply speaks calmly and uses his body language to let the dog know that he is not going to leave. Then within a few minutes it’s like they were always friends.

The most beautiful and tragic element of his videos is the readiness with which the dogs will trust a person whom they’ve just met. It demonstrates their ability to forgive and forget, but shows us what could happen if the person in whom an animal places his trust is not the kind to be armed with cheeseburgers and an innate sense of kindness. The after effects of abuse are clear to see in each video, where most of the dogs have been abandoned and left to fend for themselves. One of the more heartbreaking examples is an Alsatian called Ben, whose owners moved away and left him behind, yet still he waits by the back gate to be let in. Thanks to Eldad and his team, he’s now with a family who deserve him.

It’s probably for the best that I don’t live in LA, as after watching these videos I would by now be referred to as the ‘crazy dog lady’

Wednesday’s Got Issues : Come on America, keep up

Over the last few days I’ve seen a lot of chatter about DOMA, and the fact that the US government is debating whether to repeal the Defense of Marriage Act, signed into law in 1996 by Bill Clinton. Recently the UK government legalised gay marriage, and there are some states who have already allowed people to express their love as equal citizens, but from what I understand the repeal of the act would mean that gays would be allowed to marry nationwide, overruling any statewide laws (Please correct me if I’m wrong).

My new favourite website, BuzzFeed, has been posting articles depicting both sides of the argument, but one in particular caught my attention. Pictures of young people who oppose gay marriage holding signs explaining their reasoning. Unsurprisingly most of them mention God, a few of them are having trouble with spelling and some of them seem brainwashed and lack an understanding of the issue. The surprising part is the very fact that they are young and educated, two factors that generally indicate an open and accepting mind. I have met very few young homophobes, maybe it’s because I don’t tend to associate with the kind of people who hate my friends.

But it just seemed jarring that there are people in younger generations who are yet to move on from the restrictive outlook of the past. I’m guessing that the main reason for this is America’s refusal to separate religion and the state, their people are repeatedly told that the laws of their country must reflect those written thousands of years ago by a supposed deity, whether they worship said deity or not. To me, it seems like fairly immature way of living, the kind of attitude that I last encountered at school when trying to work out how to fit in with the cool kids. Thankfully I got over that, hopefully one day the USA will too.

Travellin’ Tuesdays : Becoming A Productive Commuter

So I’ve been away for a while, unfortunately not getting my life together, just working and wasting away in a minimum wage job while desperately seeking the start to my career. Endless application forms, a few unsuccessful interviews and I’m still without a meaningful position in life. But hey, I’m not bitter. Not at all. Nope.

So I figured that instead of spending my days glued to job boards I might as well do something productive and fun…as well as still looking for a career. Now writing a blog every day is quite the commitment, in fact it’s that level of commitment that was my undoing before. So I figured that the best time for me to set aside to write every day was my journey into work, 20 minutes of sitting on a tube with nothing but Sims Freeplay and endless ‘Mind the Gap’ announcements to entertain me. I’m not saying that I won’t falter, there will probably be days when a sudoku puzzle will simply have to come first, but I’ll do my best. And if I can make this blog into something worthwhile then all the better.
